There are advantages both ways. Like you point out, with separation, there can be a lack of teaching on some things for the younger people.
Separation tends to let you present things in a way more easily understood by the younger or inexperienced.
I wonder if sometimes a hybrid would be better, generally guided by age but more flexibility to move those along who are able to handle more difficult things.
When you get it worked out, please let me know what works best, I have struggled a lot with trying to figure the best format, and I always end up coming back to individualization, but lack the resources to really deal with every person as an individual, so I end up leaving that to God.
